Yeah, can't pass up a tempting target. "Oh look, a boss. Hrm....... Can I take him out in one shot or will I need placate?"
Same goes with the two factions fighting..say 3 coralax and 3 council...depending on how I feel at the moment, I'll AS one side of the faction, and tip the scales. They tend to keep fighting if you get out fast enough.
It's rare that I don't AS long bosses/mobs. If they're stupid enough to be standing around alone, they deserve it. ;-)
I like the Blood Widows (Arachnos LT's) that walk around Aeon City saying: "I wish I had reinforcements."

I do all the time. I don't care if the boss is grouped or solo. I love killing them as they seem to drop salvage more often and its fun nocking off bosses.
For yellow -> blue bosses I pop buildup and normally either kill them or drop them to the point where they just need a punch and they are gone.
Green bosses just take a normal AS and they are gone.
Oj->Red I will do 1 of 3 things. 1 If I feel that I have enough room to move around and get it done then I will kite them. If not and I have 2 to 3 enrages I will pop those with buildup and by that time I can take 3/4s of the Hp off the first AS, then just scrap them with a good 2-3 hits. 3rd if I really want to take the boss down but it doesn't look like a good place to kite and I dont have enough enrages ill look to see if I can go buy some (I will stop what I am doing to buy enrages and go kill a boss).
Where is the fun if I let them live?

Its not temptation, its necessity. 
In a way it is balance. Although stalkers may take longer soloing a mission than other ATs because of all the hit and run, they make up for it by spending about 5 seconds each hit taking out three or four bosses on the way to the next mission.
And when you are on a team, those street assassinations between missions are just experience gravy. If your teammates are lucky, they will be within range to share the bounty when you strike.
This is not about temptation. This is about honor!

Besides, the virtually risk free XP is too good to pass up 
Its not just bosses.
Its harder for me to resist ASing a mob thats standing on the ledge of a rooftop. Its just so fun to one shot them and watch them tumble over the side.

I'm imagining me trying to AS the Phone Booth and missing. Placating. Missing again... then, swearing a lot as the kitten claws me to death.

traveling from mission to mission is now an adventure, I just one-shot my way along. As soon as AS is back up, I grab a nearby target and continue along..... easy xp while traveling.

I can STILL scrap an even con boss solo.
Kncokdown even shte oddes beautifully.
AS if it misses the AS (Air Auperiorrty) with some recharge slotted = perma knockdown.
Gheoot hold em until AS is recharged, placate then drop em.

My team mates often follow me as I swerve off the path to AS one thing or another, and continue running. I put it down to the facination of AS, even if all they can do is watch

Well I don't have placate, or any status attacks yet. Only level 8! 
So taking on a boss without half their hp's gone doesn't appeal to me.... yet.

i remember doing this quite frequently with my ninja blade stalker in beta. it was good times!
but i just started a nrg/nrg stalker... and though he is still a lowbie, i'm frustrated by the amount of misses i get. i miss the ninja inherent acc bonus.
but once i can afford some decent acc enhancements... street sweeping may well be my new favorite passtime!
