I liked the lightsabre flashlight (I think I may have actually seen that one somewhere), the Cloud City Desklamp and the Deathstar Basketball. Though the carbonite popsicle is cool too.
Think Geek has both the Han Solo in Carbonite ice tray mold AND the lightsaber flashlight.

I could see most of these selling well actually. I don't see why they were rejected.
The R2-D2 wet bar was awesome. The Flashlightsaber was cool. The Cloud city lamp was neat.
And I'm not even a Star Wars fan. If I were then I'd definitely be saying:

I would proudly display the Cloudcity desklamp (if it was detailed enough) and the Jabba beanbag would be my guilty pleasure hidden away for lounging in (lol).
When I think of the utter rubbish Lucas has greenlit in the past it beggers belief why these genius ideas where not seen through to fruition. I can only guess there were economic or technical problems with bringing them to mass market.
