Hmm, Merry Xmas, too much information there though.

He will honor his words; he will definitely carry out his actions. What he promises he will fulfill. He does not boast about his ability, or shamelessly extol his own virtues. - Sima Qian.

Christmas meal isn't too hard if you do all the prep ahead of time and don't try and charge through it.

Tips:
- defrost the damn thing properly first, in a bucket of cold salted water if possible (rinse and pat dry before roasting)
- don't stuff it except very loosely with some onion quarters, maybe an orange or lemon, and some herbs and butter. Cook stuffing seperately and baste with turkey juices.
- roast on a rack breast side down and baste regularly - or stuff herb butter under the skin of the breast and cover with bacon rashers.
- sprouts are the work of Satan and should be banished from the Earthly plane. Instead, roast parsnips and glaze with a mixture of honey and lime juice before putting back in for last 20 min or so.
- with everyone cooking at the same time, gas pressure and/or 'leccy wattage won't be as strong as usual, so don't assume the thing's cooked when the timer's up. Check with skewer (or meat probe: which is a great gadget for me, being both a food nut and CSI fan.)
- do not be tempted to use turkeys to test bird strike against cars/trains unless properly defrosted first. It won't give the effect you're looking for, unless the effect you want is smashing through the target like a battering ram.

Is it time for the dance of joy yet?

Don't come to my house then, I absolutely adore sprouts. I've told my sister (who i have the pleasure of visiting this year) that there must be sprouts and she agrees!!

Unfortunately my dad will also be there. He is the sort who picks at his dinner then moans because the kids are making lots of noise. I'm amazed my late mother was able to slip 2 kids past him. He is fine now we are grown up but he hates children

Even we don't celebrate Xmas, Happy Xmas to everyone out there.

People keep saying next year will be worse than this year, especially economically but i feel next year will be fine. Keep your hopes up and your beloved ones near.

Have fun,

Stasis (who, coincidentally is writing this post whilst Fire Guardian watches West Wing in his dressing gown (lazy boy)) is off to work in half an hour.

But! This afternoon, we're going down to London to spend Christmas with my parents. There's going to be heaps of food (that we don't have to cook, hurrah!), Christmas films, music, games and my dad shaking the presents under the tree. No annoying family members here, my mum turns into Earth Mother at Christmas, and my dad turns into a little kid. I have no idea what Fire Guardian turns into, as it's his first ever Christmas!

Have a wonderful, wonderful holiday everyone - and eat your sprouts, they're yummy.

After reading DreamWeaver’s helpful tips on cooking the bird (not missus, mind), I thought I’d add my sixpence and expand on the whole meal cooking experience for me.

It’s quite straight forward, but does take time.

(Obviously) Get the oven on to preheat over a 20-30 minute period (can’t remember gas mark) to make sure the oven is hot enough. Once heated, put the turkey (if you do some kind of stuffing, great – but not required) in breast-side down for the first hour. Slide in the tray of oil for the potatoes to heat.

Then peel (unless you prefer the skins on) and par-boil the potatoes for 10 minutes, drain and allow to cool down.

After the first hour has passed for the turkey, rotate it so that it’s breast-side up.

Start to prepare the vegetables (sprouts = bad emissions from my [censored], so that’s a no-no) to accompany the lonely turkey and spuds.

Rotated turkey again after the next hour and you should notice that there’s a lot less blood than last time. Take out the tray of oil and add potatoes. By all means, include rosemary and garlic (my fav!!) or sprinkle paprika over them. Adding parsnips in the same tray (if it’s big enough) works a treat. Otherwise boil them.

By the next hour, the turkey should be done (depending on the size of the turkey). To check (if you don’t have a meat thermometer), tilt the turkey so that you see the juices flow out. If it’s clear (i.e. fat and no blood), the bird is done. If it’s done, leave on tray and wrap in foil to keep the heat and allow the meat to relax.

You may need to raise the temp of the oven to help the roasties along to finish them off, unless you have 2 ovens, or arga. Cook the veggies, make the gravy and you’re done!

This is what I WON’T be doing this year, as I’ve paid someone else to do it.

Cerry Mismas and a Hippy Bonk Year to all!
