Real Texans (not fake transplants from CT like our former presidents) don't put beans in their chili. We'll serve beans on the side (all the "magical fruit" you desire), but it doesn't go in the chili. Heck, there's a POV that's against putting tomatoes in chili. Originally, chili was meat and spices, that was it.
This is very, very serious business.

Around these parts, chili is a ground meat and tomato based topping for spaghetti. Pinto style beans are an optional topping, as are diced onions and shredded Cheddar cheese.
The chili itself is seasoned with seasonings that include a healthy dose of paprika and smaller amounts of cinnamon, cumin, and powdered cloves as well as ground chili peppers.

Chili recipe from my mom:

Super-Duper Chili
1 lb. ground beef
1 lb. bulk pork sausage
2 cans (15 ½ oz. each) hot chili beans
1 jar (16 oz.) salsa
1 cans (16 oz.) kidney beans, rinsed and drained
1 can (15 oz.) pinto beans, rinsed and drained
1 can (14 ½ oz.) diced tomatoes, undrained
1 can (10 ¾ oz.) condensed cream of mushroom soup, undiluted
1 can (8 oz.) tomato sauce
8 oz. Velvetta, cubed
1 ½ t chili powder (I add more, so whatever taste good to you)\
½ t cayenne pepper (again, whatever)
In a soup kettle or Dutch over, cook the sausage and beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. Yield: 14 servings (3-12 quarts).

I've made it once before and it's quite tasty. I pretty much ignored the precise measurements with the chili powder and cayenne pepper (I was more liberal); I also tossed in some hot sauce and a dash of curry powder on a whim. Turned out very well, with plenty of leftovers.
Coincidentally, that's also what I'm cooking tomorrow.
I just use the box of Carrol Shelby's chili mix, make it according to instruction but add whatever i feel like that day (beans and/or meat)

Grew up about an hour north of the burgh in Wampum and never used yinz n'at, just doing it now to be annoying. Living out in Harrisburg now and getting funny looks when I ask for pop (heck, they can't even spell burgh right.) Have a friend out this way that gets down right irate when I say crick. Telling her it runs through a holler just makes it worse .

Pulling this from a friend:
1 lb ground beef (or turkey or whatever)
1 can of beans (I used pinto)
1 can diced tomatoes
1 can diced tomatoes with chilies
1 can of corn (I just thawed some frozen, which I prefer)
1/2-packet chili or taco seasoning
1/2-packet ranch seasoning
Can't precisely remember off the top of my head what I use to make it. Have to be in the cooking mood. However, ours is always done in the crock pot.

You must be from Cincinnati... because what you are describing sounds exactly like the Cincinnati style chili we used to make at World Class in Seattle.

No recipe here. Just a tip. If you're creating a batch and it is not dark enough for your liking, add about 1 tsp of Hershey's Unsweetened Cocoa Powder to it. That'll darken it up.

oh...and the shredded cheddar isn't really all that optional. Mounds of it are pretty much mandatory.

Technically, in Indiana, downriver from Cincinnati, and closer to Louisville, actually - but yes, Cincinnati is the origin of the style. If I remember right, it was some Greek guy who invented it, and that's why the seasoning is so unusual.
I always have the cheese and onions but usually skip the beans.

As bizarre as this may sound, Wendy's Chili is one of the best chilis I have found outside of homemade... granted, it's a little 'generic' in terms of heat and 'character', but I have been repeatedly suprised at how good it is.
Take it home, give it some personal touches, and you might have a very convenient, high quality Chili experience. If you don't mind the beans, that is...

Yes, hell has frozen over. That anti-social KT guy that never says anything has started an off topic thread. Making up a big, pot of chili for the weekend and thought I'd share my recipe and see how yinz guys make your chili. Here goes:
Chorizo-Black Bean Chili
Ingredients
1 pound chorizo sausage
1 16oz jar of chunky salsa (I use Ortega medium)
1 15-16oz can of black beans (I use Goya)
1 packet chili seasoning (I use Mcormick original)
Cooking
Grill or fry the chorizo (I use a George Foreman)
Slice it into bite sized pieces
Dump everything in a slow cooker and mix it up.
Let it stew on low for at least 2 hours. The longer it stews the thicker it gets. I normally leave it overnight.
This makes a really thick chili. I either put it in a bowl or use it to fill burritos/fajitas. If I'm taking it to a party I'll make a double batch. Folks seem to like it since they tend to eat all of it.
