Having the same experience myself atm, defiant is great but it is nice to see a more full server, only problem is I'm gonna run out of slots on union soon enough so I going to need to learn German.
I've been an almost-only Union player for 18 months now, and just started to play some of my alts on Defiant a bit more. While I believe that people are equally friendly on both servers, it's true that Union is more chatty, and on Union is a lot easier to find a team... You will get a lot of invites, while on Defiant I always have to ask to join (rather than being asked), and many times I get no asnwer.
Looks like people on Def are more inclined to team with friends or players they already know, while on Union team is more casual-going.

Gotta admit I've tried the Defiant server and its good, friendly and such but my works have gone into my SG & toons mainly Union side and that's where I reside most of the time!

Welcome to Union, if you can ignore the ( rather worrying ) Atlas Park broadcasts, I'm sure you'll find Union as fun and inspiring as I do!
A few channels I'd recommend...
Union Badgehunters - absolutely brilliant group of people who 9/10 times will be right there to help you get, or offer up the missions for select badges!
Union Chaat - No matter the subject, whether its ridiculious, non game related, stupid etc etc, its disucssed here ( I'm STILL hoping for the temp power we invented with the miniture swimming pool full of girls ) - well, it normally starts on badgehunters and ends up here...
Mothership Raid Chat - keep an ear open on this channel around the level 35 mark, there are regular announcements and combat chatter from the Rikti War Zone raids!
Other things to look out for:
Roleplaying in Pocket D ( alas I forget the night, sorry RP'ers but I can't plug your night - need someone to jump in here with times )
There are also a lot of regular names to look out for on Union, best bet is to say hello on the channels above and the regulars should do the rest

B.A.F. Trial Guide
If your into the roleplaying the following locations are for you.
Pocket D's: from 8pm till late (sometimes 3-4am is when the place is finally empty of RPers) main hangout for RP villains and many a hero.
Galaxy Girl: from 9pm till about 11pm (but can go later, didn't finish RPing there myself tonight until about midnightish and there were still people hanging around). Obviously this one is heroes only.
There are a few RPing SG's and VG's as well, so check them out in the 'roleplaying Supergroup' sticky in the Roleplaying section.

Sorry about that dear, I have been busy Illustrating an Imp. , I will clock on for duty tonight though.
My mains are all on Defiant, but altists have finally got me across to Union.
You're all so lovely and friendly (well. Atlas broadcast is a bit odd).
Chatty, happy to team, add friends like no ones business, helpful tp people around Hollows, etc.
The chat channels are always talking and teasing, debating and moaning.
I got invited to a nice SG (Hi Winter Flare!).
While I love Defiant and the peolpe, my "starting" experience here has been much nicer.
