What do you like in your scrambled eggs? Diced peppers? Ketchup? Onions? Any suggestions would be nice.
Should I just skip the idea of scrambled eggs and make an omelet?

If you feel like going Mexican, add cheddar cheese to your eggs, cook them, and remove them from the pan. Then put flour tortillas into the pan (EDIT: one at a time) and heat them until brown-but-not-crispy on both sides.
If you want to go the more traditional route, I reccomend tomatoes, peppers, and cheese.
I like sunny-side up fried that are still runny, because I love dipping toast or waffles in the yolk.
I also love hard boiled eggs.
If I could eat milk any more, I'd still be making omlettes with cheese, sour cream, hot sauce, salsa, and cut up sausages. MMMM. Unfortunately fake sour cream and fake cheese just don't cook the same as the real thing, so I don't try.

The omelet will do... Some sliced ham, lots of cheese, a bunch of olives and, as you were fighting the mitos, some green peas... Dont forget to spice it a bit with garlic and oregan...

You could also get a tomato, carve a hole on it... place some cheese inside (specially catupiry, a kind of cream cheese created here on Brazil) and place your egg inside too (try to keep the parts of the egg unmixed)... A pinch of salt and a pinch of pepper to spice it...
To the oven it goes... until the egg is cooked.

The other video he did for puerco pibil is great too. I make it x3 once a month. cook one the following night and freeze the other two bags for use later in the month.
Seriously, this will make the best scrambled eggs you ever tasted.
Start with a small pot on medium heat. Crack the eggs (3) into a bowl, and add some butter in with them. I don't measure the butter, but generally eyeball it. About a tablespoon maybe a touch more. Do NOT beat the eggs. Spray the inside of the pot with a light coat of non-stick spray.
Pour the eggs and butter into the hot pot and stir constantly. When the eggs start to thicken, take the pot OFF the heat and keep stirring for about 30 seconds. Return to the heat, still stiring. 30 seconds on, 30 seconds off, until the eggs are nice and creamy looking, about 2 minutes. Don't overcook them!
Now turn the heat off and add about 1 heaping tablespoon of Ricotta Cheese and some snipped chives. Stir until well-blended and creamy. Season to taste with salt and pepper.
Serve on top of a toasted baguette.
Yum!

I have one of those magic bullets - just put some eggs, salsa (salsa should be refrigerated! :P), whatever else you want... and figure out if you can get by with the whipping vs. chopping blade.
Mix it up, and just cook it on the pan.
Yummy, well-blended, and it takes a few minutes!

1. Cook bacon in skillet.
2. Remove bacon.
3. Scramble 2 eggs and a dash of pepper in the bacon grease, adding a little bit of your favorite cheese when it starts to solidify.
4. As eggs start to become solid, form into a sandwich sized patty and continue cooking until lightly browned on the outside. (You'll be able to flip it like a burger.)
5. Toast bagel.
6. Grab a slice of your favorite cheese.
Assemble as follows:
Bagel top
Bacon
Cheese
Eggs
Bagel bottom
Best. Breakfast Sandwich. Ever.

see, the thing is, it's such a massive recipe the garlic blends in with everything else as opposed to being super overpowering.

I have a hard time digesting eggs, especially scrambled (for some reason). It makes me kind of sad.
But it's okay cause I'm not a good enough cook to make eggs actually delicious. I can make, you know, scrambled eggs that are the best freaking plain scrambled eggs ever, but add in a second ingredient and faaaaaail. >_<
I make a three cheese omelet, with feta, cream cheese and a bit of cheddar thrown in for good luck. Add to it a pinch of oregano and a pinch of parsely, and you have a tasty meal.
I like to fry an egg until it's almost set, flip it over, top with salsa and some shredded cheese and cook it on low until the cheese is melted. Mmmmm.
