Exploding Mobs
You know I never thought about that.
I'm guessing its a random thing, but it very well could be linked to damage above and beyond.
I just tried a little test in Grandville.
I can only come up with it being random.
I tried several different types of Tarantulas, all of them with the same mixed results.
I tried getting them down to low health and killing them with DoT while they are running away.
I tried killing them with a Sniper while they are running away.
I tried killing them with both low and high damage while they are still engaged in battle.
I tried all of the above while the target had a mob within melee range, and solo.
I tried all of the above while I was within melee range, and while at range.
i tried foes my level, and I tried foes much lower than mine.
Nothing seemed to make any difference. Sometimes they exploded. Sometimes they didn't.

Which got me wondering: What determines if a mechanical mob explodes when it's defeated? Is it random? Damage above and beyond what's required to defeat them? Something else?

It's a totally random chance. Originally they all exploded. But some time later (I don't recall exactly when), they were changed to only explode 50% of the time.
It was a very welcome change because Warshades have powers which depends on defeated foes. Fighting Arachnos with lots of Drones and Tarantulas before the change was as bad as fighting CoT with mostly Spectrals spawning.
I've noticed that with Nemesis Warhulks too. Most of the time when you defeat them, the Kaboomite they are boobytrapped with goes off big time. But sometimes they just plain instantly disintegrate without a messy explosion. However, the big boom, with them seems to be much more frequent than what a 50% random chance would be.

Depends on their last performance review.

The funny thing is, sometimes an exploded enemy is still usable for Stygian Circle/Unchain Essence/Dark Extraction, even if there's no "body." Try using your "targetcustomnext enemy defeated" bind/macro, you might find that you can target thin air where the enemy was and use it for those powers. I agree about Spectrals though. And Gordon Bower's defeat-all-ghosts missions would be unbearable on a Warshade if not for the ghosts' weakness to negative energy.

If you hit the gas tank they blow up. Use better Aim next time.
It's only the Pinto models that blow up when you hit them.

As another poster stated, sometimes the exploded "body" is still there. I've used Stygian Circle after taking out a bunch of Council Hoverbots and hit every single one to get my endurance/health back. Those things always explode when defeated.

Yeah you just gotta hit them from the back... tap... BOOM!
In regards to mobs that can still be targeted after exploding, you can usually recognize them by the fires they leave behind. That's a good indicator that the mob simply went through an exploding defeat animation rather than being immediately despawned.
As for the trigger to explode, as far as I can tell it's a random roll that'll go off if above or below a certain number. Nothin' like having a punch of Tarantula parts lyin' around
