Teach me about Tea
... it's the definitely the herb itself, not the alcoholic drink derived from it. My colleague is Muslim, he doesn't drink anything with alcohol in it.

Ahhh.... That makes more sense. I didn't realize the herb was still available for general use. It's been a while since I visited the herbal store.
There are a few beneficial herbs that, since they've gotten a "bad rap", many herbal stores won't carry. Lots of folks will simply grow them in their garden. Unfortunately, I don't live in a climate that encourages that kind of gardening (unless I spend a bunch of money to do it indoors). Guess I'll just have to live vicariously through my plant 'troller.

George Orwell was quite opinionated on the subject of how to brew a proper cup of tea. He wrote an essay on the subject, which contains eleven guidelines for brewing and consuming tea. None of which I would follow. Especially the part about drinking unstrained tea.

Good grief... Mr. Orwell was certainly opinionated, and arrogant enough to think his opinions should be treated as truth.
As for his opinions;
1. Indian Tea is nice, Chinese Tea is nice, Japanese Tea is nice... they are just different, and it comes down to personal preference. His assertion that Indian Tea is the ONLY tea worth drinking just makes him an arrogant blowhole.
2. I agree that small quantities are best, but not for the reasons he gives. Small batches are best for the simple reason of freshness. I do agree that a ceramic teapot is best for fresh flavor.
3. Warming the pot is a good idea to avoid losing heat (and therefore steeping effectiveness) too quickly.
4. Make your tea as strong or weak as you prefer. Often it depends on the variety you are using.
5. I have no problem with using loose tea. This is one point that I agree with him. I do think loose tea infuses better.
6. "Meh" on the "water must be boiling on impact". Just off the boil is fine. The idea is to "shock" the leaves to release the aromatics. The 3 minute steep is what really does all the work.
7. Stirring the leaves will help them settle so that they don't pour off into your cup. I've heard that sprinkling a few drops of cold water on top will do the same thing.
8. Duh. A shallow cup will cause your beverage to cool quickly. Use your own judgement.
9. Cream... bleh. That's just my opinion.
10. Are you kidding me? There's argument over whether to put cream in first? If you know how much cream you like, why should anyone else give a rat's hoo-hah?
11. No sugar? ... I believe there are several southerners who would disagree with him on this point. Although I don't go as far as our southern friends, I do think a dash of sugar actually enhances the flavor... like salt in savory dishes. And no, tea does not need to be as bitter as he seems to advocate.
Maybe Mr. Orwell was actually a closet coffee drinker.

What they serve in the South isn't tea. It's hummingbird food that's been passed through a room that may or may not have, at one point, held something approximating tea leaves.

On the topic of tea (sort of)....
I had a lovely herbal blend this evening, called "Evening in Missoula": chamomile, rosehips, raspberry leaf, papaya leaf, peppermint, spearmint, strawberry leaf, passion flower, red clover, star anise, wild cherry bark, lemon peel, wintergreen, lavender, vanilla, stevia While I agree with Traegus that it is technically not "tea", I do enjoy the occasional herbal infusion.... which is an umbrella that tea does fall under. |
absolutely NOT TEA!!!!!!!!!! but if it was tasty, good for you . question though, if you had any ability to separate the flavors in that super combo of not-tea-ness, how did the stevia taste? i know it's a natural, noncaloric sweetner, and i had tried it years ago, and it was horrible, was just wondering if maybe they have made it taste better or something.

Teas are herbal infusions, but not all herbal infusions are teas.
The Evening in Missoula is indeed a flavor packed blend of "not-tea-ness", lol.
It's the kind of blend that lends itself to individual interpretation.
To my palette, that blend has several layers of flavor...
The chamomile and mints hit first, with the lavender, cherry bark and anise following quickly. The fruit leaves are actually pretty subtle, and the vanilla & stevia work together for a slightly sweet finish. I actually feel no need to add sugar to this blend, and I find it to be a perfect "sleepy time" beverage.
