For the looks I have to say Ion Judgement - calling down lightning from the sky, then flinging it on your foes does seem pretty epic!
Stats-wise I have to give it to Barrier Judgement. The only perma-able (at Very Rare) Incarnate slot, and if two people set it off at once, then "Hello defense/res cap"

i don't know if it counts as a "power", but the favorite incarnate for me is Cardiac from alpha slot, it makes my heavy togled toons to be more "carefree" (i usually run a lot of togles even in non-melee toons)

Before the Incarnate system was announced, I futilely hoped that I would one day be able to get an AoE Heal and not have to chase down errant teammates in order to be able to use Glowing Touch on them (which has a range of paws-length! 
)
Now, it should take me a significantly shorter period of time to heal the other 1.07 million HP for my "5 Million HP Healed" badge! (*squees with delight!*)

I generally like the debuffs the Interfaces give, as I believe it can help a great way in blocking out our weaknesses (Also, my stalker is looking much forward to her Total Radial Reactive Interface to help with making her ST damage spread out :3 )
