The City Scoop! ~ Discussion ~ Nov 16, 2007
hey.
I wanted to let folks know I have a few PMs from last week that I forgot to send answers for. I apologize and will be sending replies tonight or tomorrow.

Nice job fellas!
Great Issue as always gang.

Don't expect that trend to continue. This issue was laid out by two people. Sanity and time constraints will tend to force smaller issues. This one likely is the result of next week's US Holiday.

I knew there was something wrong with the art in this issue.

Yeah, we've learned that bigger is not always better. We have a comfortable limit on how much we can put out in any given week, and when everything gets done at once, it really puts a strain on Mantid, Snow_Globe, and Dirtwolf.
There also ends up being a kind of writer's ennui that creeps over us afterwards. We're almost at the stage wher we can have 2 crews on alternate weeks, and when everyone meets deadline at the same time, then everyone kind of takes the next week off, and we're left scrambling to fill pages.
We're slowly finding the happy spot. It looks like when the Scoop is 7-10 pages, that makes almost everyone happy.
If you want more and more every week, I'm afraid you're in for a disappointment. However if you realize that a slightly smaller Scoop each week means less burn out and that we're here for a much longer time, it's a good thing.
MT and I and everyone who started the Scoop have always wanted this to be something that lasts. Keep talking to us here about how we can get you more of what you want without killing our volunteers, and we'll do our best.

just as an fyi (and this is my fault) the irregular pentad on the 30th was canceled, unfortunatly I don't have a way to take something off of the calendar, just add it.

It happens... when I compile the events for the next couple weeks, I usually don't dig through all of the threads to find out the current state of things. Its also why reoccurring events aren't listed, as they may no longer be valid and it can be quite the scramble to PM all the posters and hope they get back to us in time.
I haven't been able to figure out a better way to do it without a lot of events getting lost and/or adding work for event posters and collectors...

If the calendar is becoming useful, maybe an edit function for the OP for events would be something to ask Ex et al for the next gen of forum software.

Well, when things reach a temperature of 32 °F, the water in the cells freezes. This causes the cell walls to collapse in on themselves. Ice takes up less volume than water, so you end up with wilted lettuce and separated sour cream.
[/ QUOTE ]
Ummm, LadyK, if that were true, then we would have no aquatic life across large parts of the planet. Have you ever seen an iceberg? Icebergs exist because ice is about 10% less dense than water; water expands when it freezes, so an iceberg floats. If ice was denser than water (i.e., contracted when it froze), water at the surface would freeze and sink, exposing more water to freeze and sink, until the body of water was frozen solid to the bottom. Instead, water freezes on the surface, forming an insulating layer that keeps the water deeper down from freezing.
However, that expansion is what causes the effects you describe. When the cells in food freeze, the water in them crystallizes and expands; ice crystals are sharp, and cut through the cell walls. When the food is defrosted, the cell walls, having lost their cohesion, leak, allowing the cells to collapse, causing the wilting. Sour cream is a type of emulsion -- fat globules suspended in water through the intervention of emulsifiers -- molecules that have one end that is attracted to fat and one end attracted to water; when it freezes, the ice crystals expand and rupture the layer of emulsifier molecules around each fat globule, breaking the emulsion and letting it separate.
"But in our enthusiasm, we could not resist a radical overhaul of the system, in which all of its major weaknesses have been exposed, analyzed, and replaced with new weaknesses."
-- Bruce Leverett, Register Allocation in Optimizing Compilers
Crap, I knew that sounded off. Thanks for correcting that. I would like to say, that however it happens freezeing delicate food is, well, just plain bad.

*smooch*
I was wondering if anyone would notice.
LadyK - If you ever need anything like that looked up, give me advance notice and a deadline, and I'll find the cooking science in my Cook's Illustrated online subscription. They've usually got fantastic explanations.
Would you like any of the following recipes:
Turkey a la king
Chicken piccata
Chicken marsala
Lemon pound cake
Tangerine stir-fried beef
Lemon bars
Spice cak.. no, you don't want that one, too many ingredients. Well, you might, but not to publish.
Also, would you like a basic fudge recipe typed up? I'm going to be making a couple of batches, so I'll have one on hand. Brownies, too.
Those are the ones I happen to have online at the moment. The rest haven't been scanned in yet.

Yeah, it wasn't pepper spray, it was mace, the ground hull of the nutmeg, a.k.a Allspice.

Was a great speech and a great event. I know several PERC members were there and we all were quite impressed with all of the heartfelt speeches. Was a real pleasure to be involved.
