Patron and Epics--I have no clue
It really all depends what toons they are and what you're aiming for with them.

As Fiery Enforcer said it really depends on what your character needs. Epic pools can (to some degree) be used to shore up the weaknesses in a character's primary/secondary combo. If you want advice for a specific character thoguh someone can probably offer adivce.
As long as you are not a corruptor, defender, scrapper, or stalker, the answer is unequivocally Leviathan Mastery. Vomiting on your enemies is pure win.

If you're a Willpower scrapper, the answer is Soul. Willpower's weakness is alpha strikes. Nearly softcapped def to all for 15 seconds, every 30-45 seconds mitigates that nicely.

There are two good approaches to choosing APP/PPPs. Reinforcing your strengths or fixing your weaknesses. Identify which you want to go after and then identify what your strengths or weaknesses are. Once you've done that, finding the appropriate pool is normally straight forward. For example, if your strength/weakness is AoE then Fire is normally the best way to go.
you really just have to look at them closely and see which one supports your playstyle. For example, my Invulnerability tank isn't very durable solo, because I chose to focus on damage with my solo build. Darkest Night from the Soul Mastery pool is a perfect compliment for Invulnerability. With the +Res and +Def from Invul and the -ToHit and -Dmg from DN, all of a sudden I become nearly twice as powerful as before.

I'm going to agree with the general advice others have given, that it really depends on how you want to play each character. It really does come down to picking a set that either removes an annoyance you had with the character or gives a neat, new power that you know you'll just love to use.
If you want to toss out a specific AT that's making you scratch your head the most we could at least give some brief overviews of the different sets available to it. Rest assured that just about all of them are cool and powerful, just in different ways.
You definitely need to narrow the question down a bit... the various epic / patron pools are very different from one archtype to another. For instance, only two out of five powers are shared between Pyre Mastery for Tankers and Flame Mastery for blasters.
In general the basic rules apply: fire = damage, earth = control, etc... but the specifics vary so much that it really depends on what AT you are playing and how you are using it. Though you should always consider Leviathan Mastery because it lets you throw sharks at people.

I have to admit, I have dipped into these pools, but I have always seen them as bonus to what my "real" build is. Now that I am going to get 3 slots back on my toons, I know that I will be dipping further and really utilizing these pools.
My question is way to general to get a good answer, but here goes--any great tips on which pools I should be using for my toons? Or are there great guides that I wasn't able to find?
