I would guess the hider percentage is close to 25-30% of the stable population of each server. One method is to do a zone search during a raid or event when the zone is full.
Hami raids are the easiest. Justice usually has 33-40 people in the zone before it gets locked out. AFAIR, the maximum population in the hive is 50, so the math is relatively easy. RWZ would be more difficult since you'd need to do cross faction counting but the idea is the same.
Zone counting has fewer problems than forum polling but YMMV.

I would think people would unhide more in the Hive though to make the raid easier. I assumed it was the smart thing to do in a Hami raid and I did it but the leader was asking people to do it also to get a headcount.
Personally I see no reason to be unhidden unless I am lft.
