Which tanker should I spend millions on?
I am trying to figure out which one of my tankers I should fully IO and spend a boat load of cash on. I like to play both of these tankers: Stone/Stone and a Inv/SS. I have been researching both of these for builds that would be the most bang-for-my-buck. I want to build the best defense tank that these perspective builds will allow me to make. Any and all suggestions are welcome, good or bad..

I have to echo Terror as well, it really comes down to which one you enjoy the most. IO's can make both into phenomenal tanks.
I suspect the popular choice will be Inv/SS as you're less focused on overcoming the short comings of Granite Armor/Rooted as much as you're focused on getting to the defensive softcap and adding in recharge etc. to Inv.
(As someone with 'severe' altitis... I tend to spend inf/merits on whichever toon I'm focused on IOing that week. )
But again, which one do you enjoy playing more?

I have a invun/axe, and a stone/stone lvl 50. If you go by "best defense tank" then by far stone/stone. Youreally wouldn't need a whole lot of money, for granite is plenty tough enough with rooted, for just about anything this game throws out at you. Psionics aside, granite armor really doesn't need anything "defensively". However if you go with granite you gonna have to IO set slot for movement increase, recharge, and damage. You might even want to proc out mudpots with two or three procs to allow for extra damage, cuz in granite mudpots does alot of your damage. Lets touch on the secondary you have with your stone tank. Stone melee... Fault, tremor, and to a lessor extent siesmic smash, all grant excelent damage mitigation. Fault is 100% kd 60% chance to stun (I bieleave the number is right), tremor is a dmg+kd PBAoE; siesmic smash is a one shot hold on bosses, and uber damage. My stone/stone/pyre tanked about 90% of the game with just stone skin, rock armor, rooted and pots, because of fault tremor, and siesmic.
Now I have a invun/axe. My invun has a unfinished build, but I am damn near soft caps for defense with a full saturated invince. Now if you take handclap, that can be probmatic, however you can find on Utube a video of some one jumping back mid hand clap and the whole spawn kb's one way, thus allowing you to run in with out looseing the def bonus. The invun/ss is by far more mobile and more damageing set. but you said "best defense tank." Invun is a straight forward set, but in my opion you need to take most of the powers in the set (maybe not resist elements), and then tough and weave to come even close to a granite armor.
Both tanks are fun as hell but if I am going to go AV battlin, I grab my stone/stone/pyre, because my defense numbers are not dependent apon mobs.
This is all my opinion of course, however when you say "best defense tank" then hands down stone/stone.
protector-knight: lvl 50 invun/axe tank
Lillian Brick: lvl 50 stone/stone/pyre tank
Hybrid-knight: lvl 50 db/regen scrap
Vengful-Nature: lvl 50 spines/sr/bod scrap
Element-Wizard: lvl 50 fire/storm/stone troll
Easily Inv/SS.

The Inv/SS will want defense bonuses first, recovery bonuses second. The best defense sets can be pricey if bought with inf.
Stone/Stone you will want recharge and movement speed bonuses. Those aren't in quite the same demand, although getting recharge from the Luck of the Gambler IO set is going to set you back a ways,

Trick out the Invuln. Stone Armor is not as much fun to play and is probably going to be changed a lot in the coming year.
I wouldn't invest anything into a Stone Armor character at this time. Wait until we see what Castle comes up with to change the set.

If you are prepared to spend some inf you can soft-cap S/L/E/N defence from one enemy on Invl. I have a soft-capped invl tanking scrapper and its pretty firkking amazing with none of the stupid movement penalty of rooted or granite - I easily soloed the Manticore TF for example.
With IOs you can take some of the sting out of stones drawbacks or you can turn invl into a beast.
I honestly don't think you should spend a lot of money on your stone. The stones can be the bomb and don't need IO's. They come right out of the box super uber strong. Plus if you spec out your stone, he/she may not see a difference because it already is so strong. Yeah some IO's are good like for your travel power but you don't need to waste millions on a tank that doesn't need it. You will find more improvement in your Invul than in your stone.
Don't get me wrong, a stone would be nice to have the recharge IO's, and would be cheaper; but you seem not to care about price and I think Invul will have a much more noticable difference with IO's.

Wav, where did you see this info on Castle making changes to Stone. I sure don't want to spend time and money for them to make drastic changes to the set.
On the other side, I do like to play my inv. a little more due to not having to adjust for the speed and damage hit. I have also had a few friends tell me that inv. has too many holes in it to fill and would cost me a fortune to try and fill.
Does anyone have any good Stone/Stone build that they would like to share?
They're definitely right on Invulns costing a fortune to fully IO but it's easy to get a really survivable Stonetank and extra run speed - well I tend to look for other stuff and have an end friendly tp self and amazing taunt factor. My builds are all on my old dead poot poot so am in the process of redoing them. It's a challenge for me cos I forget much XD.

As for the summary of arguments:
"RAGH! Stone makes me slow! RAGH! It sucks! RAGH! Make everything play the exact same! RAGH! Curbs trap me, hurr, even though it's blatant hyberbole! RAGH!"
"RAGH! Stone is fine! RAGH! It doesn't suck! RAGH! The slow is easy to counter! RAGH!"
Overhaul whichever. They're both good. Invuln isn't particularly hard to soft-cap but it does take a fair number of Kinetic Combat and since people finally stopped slotting like braindead goldfish, it's gotten amusingly expensive. And unlike purples, it's less likely to drop a significant amount in price with sanctioned farming methods. That said, take advantage of things like 3 pieces of Cleaving Blow + 3 pieces of Eradication for +4.38% en/neg defense. If you hunt for those condensed bonuses like that, it'll take no time to figure out a strong build.

It's a nerfherd, pay it no heed.

It is not a nerfherd at all.
In the i16 test threads there was discussion of the possibility of altering Stone Armor so that Granite does not turn off all your other powers, does not completely obscure your costume, and to make the set less reliant on Granite overall. Castle commented that he was looking at it, that's all, he didn't indicate anything about what he was thinking of doing.
