It's not exactly 7 days, but I forget if it's shy by 4 hours like tips and a-merit rewards/purchases, or if there's a bit more leeway than that.

Someone tested it and had it nailed down precisely but unfortunately I don't remember the number. 
However I can confirm that you can simply leave the reward window up if you run a little early. Claim it when it finally becomes available.

If by "change" you actually mean "reset", correct. But if you wanted to play at all during the week, you'd have to keep moving the window because it pops back to middle with each login/zone.
