Fire/Ss seems good, for Burn/Footstomp.
I would recommend fire armor or shield armor.
Both allow you to stack ridiculous amounts of damage.
I have a fire/ss that could self cap his damage with the old FE and does even better now thanks to the burn/fe changes.
Shield is just as good and slightly sturdier if you have the budget.

I have a Lvl 50 SD/SS, a Fire/SS in the early 30's and an Elec/SS in the late 20's. All of them are alot of fun, so you shouldn't be disappointed going with any one of them.
The things that Fire and Elec have over SD are the self heals and endurance recovery/management powers inherent to the sets.
SD makes up for that by having the ability to softcap it's defenses pretty easily with IO's. If you choose to do so, you can go Aid Self for a heal.

You seem a seasoned player.
/elec is, in my opinion, the sleeper set among tanker primaries. Combined with a good-damage secondary that offers decent or better mitigation, it should be... astonishing.
Especially against non-traditional enemies.
Carnies? Laughable. (Although an elec/axe is the perfect Carnie tank.)
Malta? More than laughable. The sappers are nothing but pretty light shows to you.
Psionics? Utterly ignorable.
Arachnos? (snicker)
Vanguard? Well, SOMEBODY has to give you troubles.....
Rularuu? A good elec tank can even handle those juggernauts with more ease than most.
Cimerorans? They'll ding you around, but with moderate manuevering about and enough recharge, no issue.
AV's? Easy-peasy. Even a tower-buffed LR is easily done with a few candies or a friendly buffer or two.
It takes a very expensive build, but in the end you get something as tough or tougher than an invuln and against far more things, with zero movement penalties, better damage than any tank other than a fire, and with a literally infinite supply of endurance.
Is niiice.
Slot and build for +defense, +recharge, and +hitpoints, in that order.

Ive been thinking maybe dark/ss?
I've played a level-bumped 50 Elec/SS tanker during the issue 17 closed beta... it was ok but nothing wonderful. On the other hand it WAS an "instant 50" and only slotted with SO's so it was a long way from what it could be with IO slotting. At it's base level it had more issues with Carnies set to +2/8 than an old, SO only copy of CMA (Inv/Stone) at the same difficulty.
It's entirely possible that I hadn't figured out an optimal build or approach yet of course; it was the first time I'd ever tried either of those sets and I know CMA, even on SO's, extremely well. I can certainly see a lot of potential to be unlocked there with IO sets in the mix.
I'm in the same boat myself with my Shield/Fire approaching 50 and looking for a new tanker. Shield/SS could be a really good pairing for you; Shield's amazingly tough with just a modicum of IO slotting. In fact if you're willing to maximize your power selection you can get to roughly 42% def to all positions on SO's. So far I haven't found anything really threatening to my Shield/Fire since I softcapped him at 41.
Hmm, I've never truly played SS (the level bumped Elec/SS doesn't count), what to pair with it... this is kind of unusual but I keep coming up with Dark Armor. I've never played either set but it kind of intrigues me.

I completely understand not wanting to make yet another Superman-wannabe to add on top of the pile of Plainsville. Don't get me wrong, I know the two sets have synergy with Invincibility and Rage providing plenty of +To Hit and +Dam. But outside of that, I find Inv/ to be a lot less exciting than other tanker primaries (mind you, I don't consider it weak, just boring IMO).

I just couldnt think of the words to put it in..
i have every tank primary to date at 50 and i think your really missing out if you dont try a elec tank
elec/ss would totally rock and with rage and +end from elec your set.not to mention its more sturdy then fire and can easily be a top dog tank.
however for a 2ndary for elec..i found that /stome melee is just all kinds of smashy goodness! if you dont wanna try elec/ss then i suggest elec/sm.i know it ranks up almost as fun as my fire/fire tank.
