Also, if you play windowed (due to some glitch which I don't think is fixed, I recommend using TweakCoH to change the resoultion to Windowed while the game is not running. It also lets you do fun things like change the in-game fonts.) you can click on the "X" in the corner to quit out.

Don't know if /quit does it, but unlike clicking the X, when you use the menu option to exit the game, it will ask you if you want to quit to login or desktop, and if you choose the latter an option to skip the countdown and exit the program immediately comes up.

C does the same for chat.
T toggles your targeting window.
I hit those by accident all the time. I'm not sure if there is a single key shortcut for the menu/health/end/xp UI, or the powers tray. If there is, I never seem to hit it by accident.

No, there is no shortcut or bind of any kind to close the status window.. as it's disappearance is considered a bug. It can only be re-opened with a command (or exiting SG base edit mode), but never closed on purpose (except for when entering SG base edit mode, or hiding the whole UI entirely).

Actually, I didn't clear the "C" button, as it allows me to open the chat window while in Base Edit mode. If you are hitting it accidentally, I recommend re-binding it to something like Shift-C or some other key you are unlikely to press by accident, but something you can remember so you can also open the chat window while in SG base edit mode... or if the window accidentally gets closed for some other reason.

Specifically, adding them in messing nothing up that I know of, but not having them up will mess up some binds/macros.

The toggle bind is "cleaner" and will also close the window, whereas / and ; will not.
I've hit every key stroke possible and I cannot get my health/experience bar to show on my screen also after getting frustrated over the health bar I went to exit and see no way possible to exit this game. I have played MANY MMO's and never has the exit button been hidden like this. I read that there is a option menu, which is probably where the exit is, but can't find that either. This should not be this difficult.
Glad I'm only doing the trial right now.
