A limit to my ebilness?
Some of us don't care about "Fair Market Value".
I, personally, list all my common recipes and salvage, and uncommon salvage at 1, because I want the sale now for the badge progress. The profit off tying up the slots over the sell now price is negligible.

Very few of them are actually worth selling (what's a few K in the modern age?), but listing them for 1 entertains me- it's fun to see how much folk are paying.
When it comes to buying salvage, I overpay not because of any moral compunctions, but because I HATE re-typing bids for meaningless amounts.
5k for commons, 20k for uncommons (at least before MA messed everything up), rares 1 million (unless they're going for more).
Basically, trading inf for time and aggravation over the long haul.

I hear that. When I was sitting on 250,000; I tried to do everything I could to keep my costs down. Now that I have about 400,000,000; saving 20K on an ingredient isn't worth the hassle of typing numbers over and over again.
Yeah, I buy salvage generally at the buy it NAO price, because I'm more than going to make up the difference when I sell the crafted enhancement.
The exception is when I'm buying in bulk (say, to craft 10 of a given IO). Then I'll set a more reasonable "buy it within 24 hours" price.
(When I saw this thread title I thought, "Sure there are limits. 1. What people will pay, and 2. The 2 billion influence cap per character (not counting storing influence in AE slots). )

If I can't beat the vendor price instantly at wentworths I delete my salvage. As for buying Minimum 1500 common, 5000 uncommon. Might as well keep it worthwile for people to list things and save me the trouble of building storage bins.

Oddly, I underbid even on salvage. My inner flipper refuses to let me pay buy it nao when I can list a price, goof around for 15 minutes roleplaying in SG chat, then pick up my goodies.

It's always matched with the highest bidder that exceeds the list price. So if there are bids out of 1, 500 and 1M for something and you list it at 1, you will sell it for 1M to the person who made that bid.
On the flip side, if something has been selling for 10M but the highest current bidder is trying to buy it for 500k and you list it for 1, you sell it to that guy for 500k.
If you care about how much money you'll make on a given sale, you have to make lowball sales with care. You need to pay attention to how many outstanding bids there are, how recent the last 5 sales in the history were, and how much they were for. Of course it's better if you know more than just the last 5 sales history, but that is often at odds with folks who prefer to list things for 1 inf.

More info (maybe more than needed after the other replies)...
If there are zero outstanding bids for whatever you want to offer, then if you put it up for 1, you will be among the lowest sellers. When a buy bid comes in (for any amount) your offer will be randomly matched among anyone else who offered at one.
Note this means you may sell it for 1,000,000 ... or you may sell it for 5. As long as the buy bid is more than your sell offer, you could be matched up with the buyer.
If there are already bids that are outstanding, then nobody else is selling for 1. In that case, when you offer for 1, you'll be auto-matched with whatever the highest current bid is. This may still only be 5. Or it may be higher.
I only use a sale offer of 1 when all I'm trying to do is clear out my salvage inventory for things that I really need to collect from the market (i.e. I don't care if I make any money or not). There is zero gurantee on what you'll sell for with an offer of '1'. In all likelihood if the item is popular, you'll end up selling for lot less than market value because there will be some "flipper" out there with a bid of 50 or 100 per item that will snatch it up.

For my purposed "buy it in 15 minutes" is as good as "buy it NAO". Usually.
I am, for example, incapable of bidding 100,000 or more for uncommon salvage, no matter what it seems to be selling for. If the price is through the roof I'll put a bid in of 25,000 or 35,000, maybe 50,000 or slightly higher if I really DO want it NAO. But if I have to wait 15 minutes, that's okay by me. ^_^
On common salvage I'm happy to bid 35,000 or 50,000 a piece if it's scarce. Alchemical Silver, for example, I almost always spend 50,000 or above on, that's just what they sell for. I don't know why in my mind uncommon salvage at that price seems so much more expensive.. I'm just still in the mindset that uncommon salvage should be dirt cheap. ^_^
I kind of have the same problem with Rares these days... I'll bid 750,000, 800,000, 900,000... but I just assume that these days I should never have to pay 1 million for any rare. So far I've been proved right.
