the screen locks up and i have to turn the computer off. the graphics are all still there but nothing moves and the mouse and keyboard don't work.

Go to Applications > Disk Utility.
Select your hard disk and hit Repair Disk Permissions.
Go to Apple Menu (top left) > Software Update and make sure you're up to date.

Not the best solution, but it sorta works.
i tried this and it stopped the freezing but now i get a complete crash with the message "assertion failure". i have to log back in. any ideas about this one??
I've been having similar issues lately and have some suspicions about where the problem might lie. Do you, by chance, sometimes have Firefox open in the background while CoH is running? I'm really starting to get the impression that CoH and Firefox don't play well together.
I usually have my e-mail client and Firefox running while I'm playing, and will tab out to check my mail or look at something on the Web while I'm waiting for a loading screen or waiting for a character to log out. So sometimes when I'm playing and the game seems to be lagging a bit, I'll go to close Firefox and my mail client, and either or both will freeze up (with the spinning beachball) and refuse to quit - I can't even get the "Force Quit" window to come up. This is followed shortly by CoH freezing up completely, and I'm forced to manually shut off my Mac with the power button. And of course, thanks to the improper shutdown, it takes absolutely forever for my Mac to reboot.
I've long heard reports of Firefox memory leaks, and have heard a few rumors of the Mac CoH client having a memory leak, so I wonder if these two programs running at the same time might be causing big memory problems.
The Assertion Failure is indeed because of a memory leak. Having a Solid State Drive helps a lot. Unfortunately, there's nothing we can do about those crashes since the Cider Wrapper has been abandoned by Transgaming. You can say it hasn't but when was the last update?

Does this by chance happen when you're in the Paragon Market? That's when I run into the problem. And it seems more likely when I try to use the search function in the Market. I can still run searches but can't click on any buttons or close/move the Shop window.
I've gotten to the point where I try to avoid browsing the shop, which is ... annoying. There's some stuff in there I want. :P
For reference, my system has these specs:
Model Name: MacBook Air
Model Identifier: MacBookAir4,1
Processor Name: Intel Core i7
Processor Speed: 1.8 GHz
Number of Processors: 1
Total Number of Cores: 2
Running Mac OS X 10.7.4.
