How do you change the language? (+ @ symbol)
I don't believe CoH supports any keyboard language but English, which is why you're having trouble typing those characters. You can switch that back and forth by going to the OSX Settings, and then Language & Text, and then Input Sources. That enables a menu on the menu bar which allows you to switch keyboard input languages on the fly via a little flag icon.
As for the NC Launcher, it looks like it's multi-lingual, and probably uses the system language setting (also on Language & Text, but the Language and Region tabs).

For the launcher, a friend just found this page (haha, I feel so dumb for not having found it myself xP). As you guessed, the launcher uses the system language setting.
For the characters: when I select American instead of French, the keyboard switches from AZERTY to QWERTY but still doesn't allow to type @, [ or ] whereas I have no trouble with (, ) and actually a lot of symbols I never have to use :P I have no trouble at all on a French keyboard on Windows, though.
Anyway thank you very much for your answer I'll ask the other player if he manages to change the game's language, but I'm happy to know I'll be able to access the Paragon Market on beta.
For the @, I found through trial and errors that on a French Mac keyboard you can type it (in the email addy field for example) with the option-` key combo (just to the left of the carriage return / right of the รน key - that's on a normal full keyboard though, dunno where the key is on a laptop). Not sure how to get [ or ] though, but when I need them I just drag a power icon to the chat line and then delete the extra text. Rest works fine that way.
It works, thank you so much! (I would never have thought of trying this combination for @). For [ and ], I've just noticed you can type them with option-shift-( and option-shift-), which seems to be quite new, since it was obviously the first combination I tried when I started playing, but it wasn't displaying anything at that time.
I think the Mac launcher is a genuine OSX application, and thus sees your OSX language settings.
The CoX game itself basically lives within a Windows emulator. It seems there is something going wrong in the translation of the keyboard from OSX to the Windows emulator. I think the Windows emulator maybe just always thinks it's connected to a US keyboard, I don't know exactly how an AZERTY keyboard works, if for example the scancode for 'A' is the same as for a US keyboard, or it's the scancode for 'Q'.

On a MacBook Pro, how can I type @, [ or ] in game? Hitting the matching key or key combination doesn't display anything (I have to copy/paste "@xxxxx" from the notepad or a web browser to send a mail for instance).
Did any of you try to change the language in the Mac launcher? I'm "stuck" with French, which isn't really annoying since i'm French, I just can't access the Paragon Market on the beta server.
But another player, who's also French, can't change the settings from "English" to "French". If I remember, the Windows launcher has a drop-down menu which lets you choose your language, but the Mac one hasn't. And select "Europe" or "North America" doesn't change anything.
I ask the question here because nobody seems to know on the French forums (and the support doesn't seem to help).
And there's something else that bothers me
