unstealth yes, but it should not unhide, if it is bug it
It will suppress most forms of stealth (IO's and any stealth aside from Invisibility), which makes them easy to spot if you have any perception.

You still get the Assassination Crit while standing in quicksand, but your stealth radius as mentioned will drop to around 500 feet (while running stealth/hide/IO) meaning everyone will pretty much be able to see you.
use invis, it will not supress either
If I only have the Perc IO, and a stalker at stealth Cap (Hide, stealth + io) steps on my QS will I see them?

Yes.
Their stealth IO and Stealth will be suppressed, bringing them to just base Hide levels of concealment (500 feet). Base perception is 500 feet and your IO will give you the extra amount needed to see them.
