There's a sticky in one of the other sections listing global channels for all servers, but you'd have to read dozens (or hundreds) of posts to find all the Infinity ones.
Assuming you're interested in channels for finding teams, rather than special subjects (like the market), I would recommend:
Inf Badge Seeker
All TFs/trials and many arcs give badges so the badge hunters are all over them.
Infinity Hamidon
Originally about Hamidon raids, now also Mothership raids, it's really a general teaming channel the other 164 hours of the week.
AE Anonymous
Do not look for an AE team in here. 
Any other kind of team is golden.
BTW, due to the annoyance of RMT spammers, many global channels have you automatically silenced when you first join. Send a tell to an operator (they have a star next to their name on the channel list) to unsilence you. I'm on operator on Infinity Hamidon.

"Prime Time" for an East Coast server such as Infinity is usually weekdays after 6pm EST, and anytime on the weekends.

1) What, in your experience, is the primetime for this server?
2) What is your experience in the primetime for this server?
1) Primetime seems to start some time after 7PM EST and extend past midnight. I'm not sure how late it extends because I'm not on that late on weeknights.
2) My experience is that I never have trouble finding a team, but my situation is not typical.
- I run a top 40 SG (and associated alt SGs).
- We're in coalition with (and I have toons in) an SG that has scheduled events 4 nights per week.
- I'm on 3 of the biggest global channels and am an operator on one of them.

Yeah, it's *a* teaming channel. I'm on 3 teaming channels. AEA is one of them, but it's rarely (if ever) the most active one. And by 'active', I don't mean chatter. I mean teaming.

Ahh okay. Shoot I've been playing since release but there's still a lot about this game I've yet to explore... like channels. I just started messing with those over this past week or so. It's like a whole new world opened up for me. So what are the other teaming channels? Are there any RP or PVP channels?
Every channel regardless of name, all basically serve the same function. It's really a different crowd w/ each channel. I prefer IB2 personally, but I'm a member of several channels. The only rule we really hold people to on IB2 is no spamming. Some channels have rules against swearing, some like AEA have rules against forming AE teams on them.
As a server we tend to shift over several channels for general chatter. Some days IB2, some days Infinity Hamidon, etc. When a TF/SF forms all the channels get spammed looking for members.

AEA, IB2, Infinity Hamidon are still good places to find teams or get that quick fix for a duel.
Dragonians Channel is dedicated to the SG/VG and coalies of Dragonians. Only thing is its not just Infinity based, we use it to talk cross servers and such. But I'm pretty much on Infinity on a regular basis. @wolf-ire
