pay attention to the orange numbers that pop up over the enemies head. there will be a second or third number that pops up along with your regular damage numbers.
or you can do the easy thing and watch your combat chat.

There is also this awsome program called Herostats that corralates all this data while you play. After play sessions you can go back and datamine for how much proc damage you've done.

It will say something like " You blast (target) for XX points of bonus (lethal) damage!"
Other procs like extra endurance, slow recharge rate, etc. show up under "Healing Delivered" channel.
