I find that seating for 6 works best for a good, enjoyable meal.

As for difficulty setting, you want a setting that allows you a good kill speed, while also making sure that you don't die too often, or run out of endurance constantly. As such, it is highly variable, and depends on what you're fighting. Since you are an /SS Tanker, you have mostly single target attacks. So you'll want to fight few, stronger opponents. As such, I would suggest even-level or +1 foes, at either +0/+3/+5 team members.
Edit, or, don't worry about it, join him on a team, and you'll be at his level anyways (just with fewer powers), and you'll level just fine.

Personally I like sitting on the middle part of my chair and slightly to the left. This way when I just up and shout "I got a level" I shoot to the left and avoid knocking over my drinks.
A nice comfortable difficulty to just play at is +1 x 6 if you have a full team. If it's just you and him, -1 x3, especially if you are just going to be doing the sewers, I think you level up faster though if you do TFs. You don't have to finish them but it gives you quick missions and you can usually get teams going for those.
