  4. Food Diary - June 2nd 2009
    Breakfast:

    1L of Water, 1 cup of chopped fresh strawberries It was before my workout so I am allowed

    Activity: Biggest Loser Bootcamp level 1 & Biggest Loser cardio max level 1

    3 eggs scrambbled with one small tomato chopped, black olives, cheese, 4 mushrooms, half a green pepper, heavy cream with the eggs before being cooked (0 carbs all together about 5/6 carbs)

    Snack: 8 almonds (3 carbs), 1L of green tea/raspberry lemonde mix (both 0 carbs)

    Lunch: 1 chicken breast with 1.5 cups of broccoli/cauliflower mix (4 carbs)

    Supper:

    1 Zuccini baked with 2 tablespoons of sour cream (1 carb on sour cream, 3 carbs for Zuccini)

    2L Rasberry Lemonde/Green Tea mix ( yes crystal light again, green tea is home brewed)

    Snack: Sugar free popcle, orange, 4 carbs

    Activity: Bob's challenge

    Total Carbs for the day: 20/21 (Ya one over )

    Current weight: 225

    Goal Weight: 140

    85lbs to go

    So far in 10 weeks I have lost 25lbs and 12inches total


    (I let myself go to long with this quitting smoking weight my starting waist was 51 now I am at a 39 in 2.5 months I will be back to my skinny fit self like I was in highschool in no time!!!)

    oh i guess i forgot that too, im 6ft 1/2 inch. im the shortest guy in my family, i blame my dad since he's 6'2'' and all the rest of the guys in my family are like 6'6'' and up, with my grandpa being 7'2''. its that swedish blood in me that makes the family tall, but when my dad being a runt mixed it with my mom who's french i got stuck at 6'0.5'' so i'd get called small fry or pipsqueak by my cousins who range from 6'6'' to 6'11''

    ALICE SPRINGS CHICKEN

    4 boneless chicken breasts
    8 pieces bacon, coarsely chopped
    8 ounces fresh mushrooms, sliced
    1 tablespoon butter
    1 clove garlic, minced
    4 ounces cheddar cheese, shredded
    Season the chicken with the seasonings of your choice (I use Spicy Seasoning Salt); grill until just done. Keep the chicken warm. Meanwhile, fry the bacon in a skillet until crisp; drain on paper towels. In the same skillet, sauté the mushrooms and garlic in butter, seasoning with salt to taste. Cook until the juices have evaporated. Place the chicken on a foil-lined baking sheet. Top each piece of chicken with 1/4 of the mushrooms and bacon, then with the shredded cheese. Broil until cheese is melted and bubbly.
    Makes 4 servings
    I think this could be frozen
    Per Serving: 356 Calories; 20g Fat; 40g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs


    SMOTHERED ITALIAN CHICKEN

    ½ tsp dried oregano
    ¼ tsp garlic powder
    ¼ tsp salt
    ¼ tsp pepper
    4 boneless chicken pieces
    2 tsp virgin olive oil
    1 cup ricotta cheese
    1 cup crushed tomatoes
    4 slices mozzarella cheese

    In small bowl combine oregano, garlic powder, 1/8 tsp salt and 1/8 tsp pepper; rub over chicken. In large skillet, brown chicken in olive oil.

    Transfer to an 11X7X2 baking dish coated with non-stick spray. Combine ricotta cheese and remaining salt and pepper. Pour over chicken. Top with crushed tomatoes.

    Bake uncovered at 350° for 15 minutes. Top with sliced mozzarella cheese. Bake 5-10 minutes more until cheese is melted.
    Makes 4 servings
    Can be frozen

  12. Try: enchalada bake

    ENCHILADA BAKE

    Crust:
    4 ounces cream cheese, softened
    2 eggs
    1/2 teaspoon Seasoning for Tacos
    8 ounces cheddar cheese, shredded
    Beat or whisk the cream cheese and eggs until smooth. Add the seasoning; mix well. Stir in the cheese; mix well. Grease a 9 x 13" baking dish; spread the cheese mixture evenly over the bottom. Bake at 350º, 35 minutes or until browned, but not too dark. Let stand 5-10 minutes before adding the topping.
    Topping:
    1 pound ground beef (I Use Ground Turkey, less grease)
    3 teaspoons Seasoning for Tacos
    8 1/2 ounce jar enchilada sauce
    4 ounce can chopped green chiles
    8 ounces cheddar cheese, shredded
    Brown the hamburger; drain fat. Stir in the seasoning, enchilada sauce and chiles. Spread over the crust. Top with the cheese. Bake another 20 minutes or so until hot and bubbly. Serve with the toppings of your choice (add additional carbs).
    Makes 8-12 servings
    Can be frozen
    Optional Toppings:

    · Shredded lettuce
    · Sour cream
    · Salsa
    · Ripe olives
    · Pickled jalapeno slices
    · Guacamole

    Per 1/8 Recipe: 411 Calories; 31g Fat; 27g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
    Per 1/12 Recipe: 274 Calories; 21g Fat; 18g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs

    I have a ton more where these came from, my doc sent me over 40 pages of recipes, still waiting on Bob's challenge!!

    I got done my 50 min workout, Im now sitting enjoying scrambled eggs with tomato, green pepper, mushroom, black olives and onion with cheese!!


    Also sometimes just the crust by itself is pretty good on this recipe, ill sub it for bread when making a sandwich like turkey breast or something

    Also great thing about this the kids can put there own toppings on this and decor it up the way they want

    Ah low blood sugar hmm...
    Id have to research that, mine is insulin being to high but I am not diabetic, as ive said we are trying to reverse my insulin levels so i wont have that chance of getting diabeties and I can go about normal just have to stick with the diet for the rest of my life and hope to kick my meds once I get things under control and wont need em anymore and with my age of being so young I have a high chance of that happening if I stick with it.

    Ill have to research Hypoglycemia a bit cause sometimes whats working with me might not for you or it could work we dunno til we try it and you would have to ask your doctor.

    Ill read up on Hypoglycemia tomorrow after my workout, I need to go to bed now... 5am comes earily and me sleepy....

    actually hypoglycemia is a help to weight loss, i am border line hypoglycemic so i understand...

    the stuff with all the suger in it isnt as bad for you as those with regular sugar lvls
    when i was in HS i used to eat to much sugar and never really had a weight problem with me being as active as i was.. now i have to get my fat butt active again and i should be regular once again

    reverse it nerfy you got that chance do it girl! Thats what I am trying to do with myself is reverse the high insulin before I become borderline diabetic I am not even close yet thxfully *knock on wood, prays that I can get things back on track* !! 3 months ago with tests my insulin was 90 diabetic is 220+ ... i gotta get more tests soon to see what its at now but the doc said it had to come down alot since ive lost so much weight, ill find out soon enough, its just hard to get to the docs right now cause hubby is in training mon-fri for the next 4 weeks and I dont drive

    But anyone can reserse anything if they put there mind to it, one guy on the biggest loser had heart probs, diabeties you name it he had it .... it seem'd... it was nuts!

    But after he lost almost 200lb I think it was he didn't need any of his meds anymore and he was/is healthy as a horse

    He was part of the yellow team in the last season I believe or the season before.. can't remember but I am friends with his daughter on facebook

    Accually have alot of Biggest loser folks on my facebook friends there awesome insperation!

    Depends on the brand, one brand I had was 16 carbs another was 19, depends on the company too.

    Snack: 6 almonds, water

    Lunch: Salad with tomatoes, cucumber, black olives and cottage cheese (1/3 cup) no dressing

    Supper:

    Salad: Ingredients: Lettace, cucumber, tomatoes, cheese and black olives with ranch (2 tablespoons) and 2 peices of pizza (again good on the pizza, worked out after dinner 25mins jump rope burned off pizza!)

    Rasberry Lemonde/Green Tea mix ( yes crystal light again, green tea is home brewed)

    Snack: Sugar free popcle, cherry, 4 carbs

    Activity: Bob's challenge

    Total Carbs for the day: 20 (Like I am suppose too)

    Current weight: 225ish or so...

    Goal Weight: 140

  17. I can't has yogurt
    To many carbs....
    Even though its overnight then cooked its still in there, that would spike things and I am trying to keep things low.
    Mainly reason why i got my bbq grill out for the summer, can cook ALOT of meat!
    Far as I go when I do that is with season salt and some of my homemade BBQ sauce or spicy mustard.......
    yeah I know sucks but I deal with it
    and I don't fry stuff thats just really bad..... expecally in oil
    only thing I will fry is some ground turkey with some cooking spray....
    Garlic 1 tsp of that has 1 carb I try to stay away from it

    Some dishes ive made are :

    Chicken Kabobs

    Turkey Burgers with Cream Cheese & Jalapeno middles (3 carbs per burger, no bun of course)

    Sub Mashed Taters its accually cauliflower mashed. You put butter (no carbs) cheese (less then a carb per serving but it don't count cause im allowed unlimited cheese) 2tbs of heavy cream (no carbs) 1cup of mashed cauliflower (4 cups total for recipe) and its pretty freaken good, only 3 carbs per serving.... 1c = 1 serving. If you like cauliflower with cheese you will love this!

    enchalada bake Depending on your toppings etc depend on the carbs..... the crust is just eggs, cream cheese and cheese

    Cream of Chicken & Broccoli Soup (3 carbs)

    Sausage and Collard Green soup with tomatoes (5 carbs)

    Pork Chops & Baked Zuccini

    My dinner not docs orders but my orders, some roasted zuccini and pork chops with some carmelized onion yum! The white stuff sour cream had 1 carb per serv so prolly all in all.... 8carbs or so for that meal

    But thats to give ya a idea

    Key to not being hungry is 6 small meals a day 3 small meals 3 snacks

    now if you continue to get hungry you should get ur insulin and thyrods checked, they play a huge part. Just to get a check up period....

    Lunch i had a peice of left over slow cooked chicken and salad with black olives, tomatoes, cucumber and some cottage cheese yummmmy!

  22. One thing I eat/drink before my workout most days are 1.5 cups of strawberries blended with cranberry juice its really good

    Or peaches blended with orange juice, its really good!

    ladies, stay away from sweeteners. they are bad for you. i know they make things taste better but if you drop them you will see faster results. also be carefull on the amount of tea you drink. tea's have more caffine than coffee and dehydrate's your body which is not a good thing. as i said drink lots of water, water is the key to all life. these are things i have learned from a friend of mine who is a fitness guru and makes me sick as he has only 4% body fat and eats anything he wants but is allways on the go. one day we will all be able to do that too.

    I use splenda when I make desserts for family get togethers 3-4 times a year and its usually cheesecake
    I can't stand sugar/sweetner in my tea/coffee to be honest
    The tea I have is caffine free and coffee i drink maybe twice a month now that im pretty much outta tim's coffee
    Diet sodas I have maybe 2-3 a week sometimes none
    Your friend was like i was in highschool lol
    Then i quit smoking and gained 110lbs from quitting and all the junk food I ate to help with my cravings lol
    Let's do this together folks, we can do it!
  24. I gotta watch those Tea's mrs A, some have carbs!
    The green tea I have is lipton and I brew up a huge pot of water and put the bags in there to soak for 15mins (0 carb tea), then cool and put in the fridge, the crystal light I have is 0 carbs too. I found some teas have 1-2 carbs per cup = BAD for me since im only allowed 20 a day lol.

    I also have my tim's earl grey for when i want hot tea = 0 carbs

    diet rite is a good diet pop = 0 carbs

    and bob's challenge is up, pretty easy one today

    Today's Challenge I want women having 1200 calories and men can have 1800. This is a great way to see what it is you are eating and how many calories are in your food and if it's worth it. Don't forget to count what you are drinking also...
