Demo Record and change the camera to better frame your character in the shot.
And/or
Use a second account/computer/user to take the pictures of your character.
Otherwise, you have to zoom so far out in order to get your character's full body.
Other than that, if simply doing them by yourself in the game, inching your character to the very edge of a ledge and moving the camera down just enough to get the whole body can do alright.
And flying characters can help you position the camera better.
As can jumping. However, this is only if you want the character in either a flying or jumping position.
I highly recommend using a separate camera (either through a separate character or through demo editing).
If you need help demo editing... I'm sure we can point you in the right direction.
It's quite simple really. For such a thing as screenshots, you'll just change a few numbers in a text file that sets the 3D coordinates of the camera. Play it back and snap the screenshots as it plays.

If you want to make a group shot with all your characters, check this thread for a quick guide. You can leave a single character in the Characters folder and run around a very tiny area if you want to position it in a specific place, and still have full control of the camera.
