Apart from the snake GM, and lore pets, all those things will still exist. They're not getting rid of them, just making it so the progression doesn't feel like Snake-a-palooza. I suggest running Operative Grillo's content if you've never done it, as that is designed to be the completion of the circle in terms of Snakes. Going back as a 45+ villain and trashing them and trashing Stheno is well worth it.

Yeah, there are plenty of snakes, but you shouldn't have to worry, as they aren't deleting the snakes. They are just redoing Mercy. It needs it, badly. Everyone should know of how much it sucked when you had to constantly run a mile through that island just between missions.

I thought I read that the Mercy redesign isn't as drastic as the Atlas redesign in terms of the overall layout, but getting around will be much easier anyway, due to the travel powers revamp.
In any event.. yay snakes.
I know a lot of folks are excited about the mission revamp in Mercy and looking forward to dealing with less snakes. I understand this. However, I think that the snakes are a really cool enemy group, when used in moderation. I'd like to see a couple more snake storylines here and there. I'd love to see a gigantic snake GM pop up in Mercy now and then also. Last, I'd like some Snake based Lore pets.
