Invulnerable and the Softcap
That's entirely up to you, your preferences, and your playstyle.
Would you rather not get hit, or have your powers come back quicker?
You can pop a purple inspiration for situations like that, unless you are building the character around soloing AVs/pylons. You just have to ask yourself how many enemies you plan on fighting at once, and what your goals are for the character.
I plan on respeccing him at some point, but FWIW, on my current BS/Inv build, I use both Invincibility and Parry to "cheat" on softcap Def. While he's not the uberest, and he definitely won't be soloing AV's, he's pretty tough and get through most of the game content.
I prioritized S/L /E/N protection, and decided to get by on F/C with whatever slots I had left (which wasn't much). So he is softcapped to E/N with 5 mobs in range, and likewise has around 30% Def to S/L, so that one Parry will put him over softcap to Lethal. I still have a bit of a hole against Smashing, but decided to let my Resistances and Parry's Melee Def handle the difference. He admittedly has a glaring hole in F/C Def, but those are not as common as the other types.
Obviously, I leverage Invincibility as much as I can, and use Parry often. I do ITF speed runs often, and there have been times when I was was overwhelmed by the Romans when unable to hit with Parry. But he generally holds up well in all other aspects, including the crystal mish.
As an /Invuln, I think it's worth getting your S/L/E/NE Defenses to the 35-40% region when one enemy is in melee range. F/C Defense isn't something I'd focus any IO sets on mostly because F/C damage is rare and often comes with an S/L component.

I've built for Defense softcapping S/L/F/C/E/N with one foe in Melee and then getting Recharge in. The build is not in use yet, as it is my I19 build but the one I currently use is Defense softcapped with S/L and 40% at F/C/E/N and Recharge. I picked a DM/Inv because I wanted to be indestructable, with other powers to fall back on in case straight up softcapped Defense wasn't enough. To that end Invulnerability has just a huge amount common damage Resist of Smashing and Lethal (easily 70% with Tough), Dullpain (and the HP capping along with it) and Dark Melee has Siphon Life. I just didn't want to die, even to my weaknesses, but at the same time didn't want to give up on good damage either.
With the Spiritual Alpha power in I19, my survivability and damage will only go up once again with the Uncommon's Recharge + Heal enhancements. I'd say with DM/Inv, it is one of the toughest combinations I've ever played on a Scrapper. If it were damage I were going for and wanted to keep Invulnerability, Fiery Melee with a focus on Recharge (then Defense afterward) would be my Primary instead.
The nice thing about the ability to be Defense softcapped with only one foe in Melee is that if you're surrounded and have saturated Invincibility, then the 50% Defense debuff resist + your over-the-softcap Defenses will give you some padding before you're in the Defense cascade failure zone.

With Invincibility in mind is there any point building to the softcap when you just have one or two enemies around you, would I be better building for recharge (Dark/Inv)
