I spent about 10 minutes watching Silver Weasel, waiting for the right moment, but I normally see a target of opportunity during a long-period stalk.
I've spent a long time wearing down stormies, with long-distance impale, followed up by a bounce-through-brawl to try to get the toggle off. That's not really a stalk though, just a tactic using the stealth capability of the AT to escape, displace and repeat.
I once stalked a Blaster for about 3/4 of an hour, I was being careful as he was in a team where 3 of them had tactics (as far as I could tell) and he himself had a Targetting Drone.
I think he was a fire/dev Blaster, so if he ever got a hold of me (too careful for that to happen, mind) I'd be dead meat.
I ended up destroying him when he was at one of the meteors, probably waiting for someone to come and collect a sample.
So, I had a trick up my sleeve, I asked a teammate to come and collect a sample, and as he had grant invis for me to be able to sneak up on him (he was now alone).
He was hovering there, whilst I had flew up towards him and I ended up stabbing him in the back and finishing him off with a red-induced flashing steel. I only just managed to get the second attack off before he was lying on the ground out of melee range.
Yeah I have spent a stupid amount of time on a couple of stalks. I suppose the longest is about 30 mins - the bugger just would not sit still. They met there maker when they decided to see how high they could get. Impale followed by a nice long drop rounded off with a devasting brawl.
Also if on my blacklist or just really [censored] me off I will also spend alot of time on them. Ive waited outside of a persons missions entrance in order to get them.

my longest is probably around 20 mins, though i'm not sure you could class it as stalk, he could see me quite easily and insisted on trying to tp me into the hero base, after 20 minutes of him constantly trying i got bored with the fact he didnt realise he could do it (etropy shield FTW), so i tp'd him out the base and killed him, then spent the rest of the night doing the same 
It didnt even get boring 
I got a defender in Bloody Bay after about 15 minutes. I wa following him while he was flying, but never stopped anywhere. Sooo, i used my target bind over broadcast: "$target, you have been marked for assassination...", he stopped to reply, and that's when i got the kill 
I spent about 15 minutes in Blood bay following a Robots/FF MM waiting for him to drop PFF.
The amusing thing is when he did, some other stalker that I hadn't seen ASed him before I could, so I ASed the stalker and informed him that I didn't appreciate him stealing my prey.
Afterwards we had a laugh about it. Turns out we'd both been stalking the same guy for about 15 minutes without realising the other guy was there.
I guess this was back when bloody bay was free for all?

Whats the longest you ever stalked someone? I remember one stalker saying he spent 30 minutes on one target. I think I've only managed about 10.
