Probably the best place to ask this....
There's no easy way that I know of... the usual method is to get FRAPS or some other video-capture program and just film your demos
I'm sure someone else can answer this better than I can, but I'll give you the 'short, short version.' (I'll just assume you don't know how to play them back currently, take not offense, it's for completeness.)
First, cohdemos are just text files recording what is going on in CoX. These cannot be directly converted to avi/mpegs. What you first need to do is playback the demo. How? The easiest way is to make a shortcut to your coh exe and append the -demoplay to the end of it. For example:
"F:\Program Files\City of Heroes\CityOfHeroes.exe" -demoplay
Then it's a simple matter of dragging and dropping a demo onto the shortcut and it will execute. (Ctl + P to pause / resume, esc to exit). Or you can download Zloth's demo launcher program, I'm sure he'd be happy to point you to where it's located.
Now, that is just to play the demo. To actually get it to a video format, you'd need to use a video capture program (most popular two are fraps and gamecam, easily googlable) to record the playback to avi.
Once you have the avi, then you can go on editing it in whatever video editing software you have. Hope this helps!
