Original launcher?
1) The original launcher, probably, but it wouldn't work anymore. Even if you bypassed the launcher, it wouldn't let you log in because your version of the game wouldn't match the current version.
2) Not without servers, no.

starting the game for the purposes of demo playback?

Fortunately you can use the executable to do that and don't need the launcher.

I've seen this point brought up briefly over on the titan boards and it prompted a question or two.
1) Would hard copies of the game made before everything switched over to the NCSoft launcher contain the original programming?
2) could that programming (if it exists) be used to revert existing copies of the game back to the 'old' way of doing things once NCSoft ends it's involvement with the game?
I am not a programmer so I honestly have no clue if this would work. Anyone have any thoughts about this?
