Both defense styles will work very well. The differences between 44 and 45% won't matter much and fire/cold damage is quite rare.
I can't help but notice, though, that your build is ridiculously end heavy.
Drop Acrobatics. The Steadfast -KB proc will cover you for most anything you'll face. If you're worried you can slot Super Jump with the Blessing of the Zephyr proc. Also Cloak of Fear is pointless in this build; aside from the lack of anything to stack with it, you also have Oppressive Gloom. Having a fear aura and stun aura running won't help you any as they won't stack with each other. It's better to have one or the other. Also, see about slotting the Numina proc into health as well. That should help get your endurance under better control.
Full on recharge and 2500+hp :P
I wouldn't worry as much about F/C damage at all. I've found that there are very few things that F/C defense protects against that S/L does not. Here's the latest build I've posted for my Dark/Fire. It's pre-i18, though. I really need to post the update.
The most important number, I've found, is E/N. The reason for that is that your energy resist is so low you need something to cover it.
Regarding KB protection: You need mag 12 if you don't want to be knocked around by the big stuff. The steadfast protection IO gives you 4, but you'll still get bounced by things like singularity and Nemesis. My brute only had room for one KB protection IO, so he has Acrobatics. My tank has three KB protection IOs, so he doesn't need it.

I have a Dark/Fire tanker and I have a question. Which would you prefer...
45 Defense to S/L/E/N and 35 Defense to F/C or 44 Defense to S/L/E/N and 40 Defense to F/C.
I know that, at face value, it seems like a no brainer but I'm wondering just how much of a difference that last 1% makes with regard to softcapping.
I currently use the 45/35 but am leaning toward respeccing to 44/40.
