A little help from the movie-making gurus out there

Hello all. I find myself in need of some guidance. I'm in a college class that is requiring me to make a video using a virtual world program. I, of course, decided to use CoX because I'm very familiar with it and it's so incredibly awesome. The problem is, I've never tried anything like this before, and I have several questions. I hope some of you experts can help me out. Okay, here goes:

1. I was told that Fraps was a good tool to use to capture video, so I downloaded the free version. It works well, but the one problem I have is that I don't want to have all my trays visible in the movie. Of course, I can close all my trays, but then some of the action sequences I would like to do would be very difficult. Is there any way to leave my trays open but not have them in the movie? I think I read that using /demorecord can do this; if so, that leads to question 2-

2. Will /demorecord capture the video without the trays showing (like printscreen does)? If so, how do I use demorecord? I think I sort of understand the basic process, but I'm not sure how to turn it from a text file into a movie file that can be viewed from a standard media player.

3. Once I have the movie, I will have to do some editing. Mainly this will be voiceover work, but I might also need to zoom in/crop and insert text and such. Is there a good (cheap or free) program that I can get to do this?

Thanks in advance for any help you can offer. My projects aren't due for several weeks, but I want to get some practice in so I know what I'm doing.
