Temp sensor/Fan control

So, are you looking for something that automatically controls fan speed, or just a series of pots, where you can do it manually?
Also, what case and how many fans do you want to control?
This is the case I was looking at and going to run the stock fans and add an intake in the front grill so that would be 5 fans total but the back exhaust I would imagine should always run its the extras causing noise that i'm worried about
And I would prefer something that both lets me see the temps and pots to control the fans..

Well, if you only need to control four fans, this should be fairly straightforward. Keep in mind that the fans will, with most of these controllers, have to be the 3-pin connector type that goes into your motherboard as opposed to the Molex-type plugs that go directly into your power supply.

Sorry I didn't get back to this yesterday.
Here's one that will monitor and control 5 fans. They're out of stock for this place, but you could likely find one somewhere else.
Also the same store has probably one of the larger selections for controllers and monitors. A little expensive, but I've never had an issue with anything I bought here.
